Paleo-Friendly MCT Bars

Many Easter staples offer little-to-no nutritional value. These Paleo-friendly MCT Bars are your clean-energy alternative to sugary Easter treats. Made with nourishing fats and powerhouse ingredients, they fuel performance without the crash. Want to make your own? Try this easy DIY recipe:

Ingredients:

  • 1 cup shredded coconut flakes

  • 1 cup ground almonds

  • ½ cup hemp hearts

  • ½ cup Collagen Complex™

  • 1.5 cup almond butter 

  • 3 tbsp raw cacao powder

  • 1 tsp salt

  • 3 tbsp MCT oil 

  • 3 tbsp raw cacao powder

  • 3 tbsp raw honey (or sweetener of choice)

  • 1 cup unsweetened dark chocolate chips (70%)

Directions:

  1. In a bowl, mix together shredded coconut, ground almonds, chia seeds, hemp hearts, salt, almond butter, 2 tablespoons of MCT oil, honey, Collagen Complex™, cacao powder.

  2. Mix ingredients until a dough is formed.

  3. In a microwave-safe bowl, melt chocolate chips, in 30-second intervals, until smooth. Add 1 tablespoon of MCT oil to the melted chocolate and stir to combine. 

  4. Line a non-stick square brownie pan with parchment paper. Add the dough into the pan, and pat and press until the dough forms a thick, even layer. 

  5. Add the melted chocolate and smooth over the top evenly.

  6. Top with sea salt flakes, or cacao nibs, or toppings of choice and refrigerate until the chocolate layer hardens (2-6 hours). 

  7. Remove from pan, slice into bars, and enjoy!
