HEART HEALTHY PALEO COLLAGEN PANCAKES RECIPE

Take out the refined sugar and dairy with these paleo-friendly collagen pancakes. Featuring Collagen Complex for skin and bone health, coconut flour, and coconut milk for moisture.

Ingredients:

  • 2 scoops of Collagen Complex™

  • Pinch Himalayan salt

  • 1/4 cup coconut flour

  • 1/8 tsp baking soda

  • 3 eggs (or flax eggs)

  • 1/2 tsp vanilla

  • 1/4 cup coconut milk

  • 2 tbsp coconut oil

DIRECTIONS:

  1. Combine all wet ingredients in a mixing bowl and set aside.

  2. Combine all dry ingredients in a bowl, and add to the wet ingredients. Mix well.

  3. Preheat a griddle or frying pan on medium heat with grass-fed butter or coconut oil. 

  4. Scoop out the batter and cook until pancakes begin to lightly bubble. Flip and cook until golden brown.

  5. Plate and serve topped with some berries, peanut butter, or any toppings of your choice.
